We are small family operations and product availability is limited.
Average size 1/2 beef would range from 300-325 pounds HANGING CARCASS WEIGHT. Loss from bones, fat, etc, is approximately 30% of carcass weight. Package (Take Home) weight on 1/2 beef, average size, would be 210-227 pounds. There is approximately 65-70 pounds of ground beef, 3-4, 1-1/2 pound packages of soup bones and short ribs per 1/2 beef. Approximately 6, 1 pound packages of lean cubes of stew meat per 1/2 beef. The rest of the beef depends upon the cuts requested and the size roasts and thickness of steaks cut.
**NOTE: If splitting a half beef, both cutting instructions must be identical for equal portions of meat.
DIFFERENT TERMS USED WHEN BUYING A BEEF
ON THE HOOF: This refers to the animal being bought off the ranch. Typical weight for a grain finished animal would be 1150-1200 pounds. Typical grass finished weight would be 950-1050 pounds.
