Our Highland cattle are naturally raised on grass pastures. Our cattle never receive steroids, antibiotic feed additives, growth hormones, animal by-products or GMO feed.(GMO=Genetically Modified Organisms) Our grain finished animals are harvested at approximately two years, 1150-1200 pounds and are dry-aged for a minimum of 28 days. Our grass finished animals are harvested between two to three years old, 950-1050 pounds and due to the minimal back fat aging time may vary between 14 to 19 days. Chemicals or water are never added to our meat.
The Breed
Highland cattle are hardy, thrifty, slow growing and long lived. They are extremely maternal, intelligent, and gentle.
